Strawberry Cobbler...Thanks EILEEN!!!


This is soooo yummy. First let me start by saying, how GOOD it smells in my house...Kind of like a strawberry sundae from McDonalds...Weird, but good.

Eileen, a close and dear friend of mine passed along this recipe from RecipeZaar. I just had to make it tonight and WOW is all I can say..very easy and the most yummiest thing EVER. Cant wait to make this with my berries this summer.

Here is the recipe for it...pleasemake this right away and sit back, and ENJOY it...


Ingredients
1/4 cup butter or margarine, softened
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
3 cups fresh strawberries, cut in half lengthwise
1/4 cup all-purpose flour
1/4 cup sugar
1/4 cup butter or margarine, chilled
Directions
1Beat 1/4 cup softened butter at medium speed with an electric mixer; gradually add 3/4 cup sugar, beating well.
2Add egg and vanilla, beating well.
3Combine 1 1/4 cup flour, baking powder, and salt; add to butter mixture alternately with milk, beginning and ending with flour mixture.
4Spoon mixture into a greased 8-inch square baking dish.
5Arrange strawberries on top, cut side down.
6Combine 1/4 cup flour and 1/4 cup sugar; cut in 1/4 cup chilled butter with pastry blender until crumbly.
7Sprinkle over strawberries.
8Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean.
9Serve warm with ice cream or whipped cream.

Glazed Apple Cookies


Hello everyone, It has been awhile since I updated with a new recipe. I was in the mood for something abit more healthy and thought that apples and some raisins would fit the bill. I did a search for apple cookies at allrecipes.com and found this recipe. It is called Glazed Apple Cookies.
These are so yummy and taste sooo good.

1/2 cup butter/margarine
1 1/3 cups packed brown sugar
1 egg
1/2 cup of oatmeal
2 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 cup chopped walnuts (optional)
1 cup apples - peeled, cored and finely diced (i used 2 apples shredded)
1 cup raisins (soaked in warm water to plump them up a bit)
1/4 cup milk
1 1/2 cups sifted confectioners' sugar
1 tablespoon butter
1/2 teaspoon vanilla extract
2 1/2 tablespoons milk

DIRECTIONS
Beat butter and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
Stir together oatmeal, flour, baking soda, salt, cinnamon, cloves and nutmeg.
Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 375 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
To make Glaze: Combine powdered sugar, butter, vanilla and enough milk to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.

Bakerela cupcake bites


Yesterday I made some very yummy cupcake bites. After rolling them into large balls and letting them rest in the fridge over night, I thought today would be a perfect day to play with them a bit. I soooo wanted to make the adorable cupcakes like she does, but alas, I was unable to do it. So, I compromised and made my own little creation. I used the pampered chef mini cut outs in the star shape. Then placed them back into the fridge. While they were in the fridge, I melted some white bark in my make shift double boiler. Dipped the stars into the melted bark and them into some colored sugar. These are going into my Christmas cookie tins for the friends of our neighborhood. This is my first time bloggin, so please bare with me. Let me tell ya a bit about myself. I am a SAHM and proud Army wife to my DH Phil. I have 3 kids, Emily 6, Jonathan 4 and Kaitlyn 9weeks. I LOVE to cook and bake and my favorite shows are on the Food Network. I adore Paula Deen and Barefoot Contessa. I believe in butter and mayonnaise and LOVE sour cream and casseroles. Simple cooking that taste good is a good thing. Baking and experimenting is also a fun thing to do. My ultimate goal is to meet people here, pick up a few recipes or two, try them out and just have some fun doing it.
